Quinoa with grilled peppers and cauliflower

Serves: 2-4
  • 1 cup quinoa
  • 1 small head cauliflower
  • 2 red peppers
  • olive oil to drizzle over veg
  • salt for seasoning of veg
  • 3 tbsp olive oil
  • 3 tbsp freshly squeezed lime juice
  • 2 tbsp honey
  • small handful of freshly chopped coriander
  1. Preheat oven to 200C.
  2. Rinse quinoa and add to a medium pot.
  3. Cover with boiling water and let it simmer for about 15 minutes until water all the is fully absorbed and remove from heat.
  4. While the quinoa is busy cooking, place the cauliflower, cut into florets, on a baking tray along with red peppers, cut in halves.
  5. Toss cauliflower florets with olive oil and salt and rub a bit of olive oil on the peppers.
  6. Grill for about 20min by turning/stirring halfway through until brown and charred slightly.
  7. Slice grilled pepper in strips.
  8. Combine quinoa, cauliflower and pepper in a bowl.
  9. Combine olive oil, lime juice, and honey.
  10. Pour dressing over quinoa mix and toss in with the freshly chopped coriander before serving.
